I just called Lauren, and she gave me great advice on how to use some of this stuff! I am making mashed turnips to go with my steak, and a salad with watercress. Thanks Lauren!!!
We've been on the kohlrabi/turnip/parsnip/celery root hash craze. We mix them up depending on what we have in the fridge. Shred a big bowl of it, mix it up and store in the fridge. Toss it in the pan in the morning on some coconut oil as a side for our eggs. Done in couple of minutes and it's almost like real hash! (For those of you strict folks - as Diso pointed out to me - all of the above are pretty high glycemic veg so you should skip your piece of fruit.:)) Fairly annoying to prep if you're hand-shredding, but worth it as it lasts all week. I need a fancy shredder damn it! :)
