liz: still on the bandwagon! @crose - 'what i learned last week' - sunday night I hosted a dinner party - what to make? ended up steaming cauliflower and pureeing with a smidge of bacon fat and chicken stock (instead of butter & cream as the recipe called for) and I made roasted chicken that I marinated in garlic, oregano, red wine vinegar, olive oil, dates, olives & capers. Recipe calls to add white wine & brown sugar before cooking; I skipped that step and it was still awesome. My guests didn't even know they were enjoying a paleo meal! I enjoyed a glass of cucumber-lemon water while they drank Pinot. Yes, I wanted some. BUT - I learned....I can still entertain...and make good food....and do this whole 'paleo' thing. breakfast: 2 eggs, sauteed spinach & onions, 4 slices of bacon (yes that's a lot - I wasn't hungry after the 10k last night and after this morning's wod was pretty much starving) lunch: lettuce with cucumbers & radish, balsamic vinegar. side of fruit salad. PM snack: 1/2 breast leftover roasted chicken + cauliflower
Nice job Liz! Thats how I started, I would find a recipe on foodnetwork.com and then adjust as needed, the best substitution discovery I made has definitely been coconut milk for cream. Makes amazing soups and sauces:)
Breakfast - skirt steak, root veggie hash, half a pemmican bar
Awesome insight Liz! Still one of my toughest things is balancing good times with non-paleo people without being hassled the whole time! =/ Good to know it CAN be done!!
Lunch: Amazing raw kale salad with heirloom cherry tomatoes, baby beets, broccolini, chopped almonds, spicy sprouts, turkey breast, and some crushed plantains with mustard balsamic. (Photo on FB :) NOM!
