IWC Challenge Day 2: The adventure Continues

A lot of people get stuck in the what you can't eat mindframe, but there are so many different foods you can try! Go to your local farmers market and see for yourself! Go online and make a recipe that sounds interesting. A classic example is using different root vegetables to substitute

for potatoes, such as: sweet potatoes, parsnips, celery root, rutabaga, turnips and kolrabi. I didn't even know those things existed a couple years ago and I am still discovering new things I love today!



Food is an adventure, embrace it! Just be sure to share your moments of glory and defeat in the comments below:)

Sto: Breakfast: turkey chili/1 apple/1 orange/green tea.

Amy B-fast: 3 eggs, two roasted tomatoes, 2 slices nitrate free bacon, sauteed spinach. Mint tea

Lunch: Left over chicken fajitas, sliver of avocado,10 cherry tomatoes, green tea.

I almost stopped by foster's freeze and got a dip cone, until I remembered I am on the paleo challenge. Duh! Not Winning, if I do that!!

That's me finishing off a leg of lamb! The other pic I had was a bit too graphic, I'll post it if I can find it again:)

For breakfast had scrambled eggs and turkey bacon from Rainbow Acres with a whole avocado.

Heading home for lunch, skirt steak with sweet potatoes fried in coconut oil:)

Sto: Lunch: Ridiculously large spinach salad with chicken, eggs, mandarin oranges. Took forever to get through it.

Diso: I think I remember the other pic of your "scrumptious" leg of lamb. Yikes.

Had a couple ounces of organic herb turkey breast, and the leftovers from my delectable green smoothie (serious. they are the key).

Lunch with my boss, he wanted MEXICAN! Ugh - I had chicken fajita meat w/peppers onions, tomatoes, mushrooms, a dab of guacamole and some salsa. I hate being so fresh on a challenge and having to eat out - but it was the best choice for sure and still paleo (though questionably zone)...

CRose - One of my favorite eating out meals is straight up carnitas or carne asada with a fat side of guacamole and salad. Love it! Great too for late nights out as mexican joints are always open!

Liz: yesterday I had to go to VEGAS of all places for work. What a great way to kick off the challenge! I made 2 scrambled eggs + broccoli for breakfast and then headed to the airport with a poached chicken breast, 3 c. broccoli, & 1/2 c. walnuts and an apple. Ate everything but the walnuts by the time I went to a work dinner, where I had 6 oysters and a plate of sashimi (no veggies). Is shellfish OK? I'm assuming yes....

Breakfast: 2 egg scrambled with onions, SD tomatoes, spinach, bacon and avacado.

Lunch: Left-overs from dinner. Cajun chicken breast with a side of brussel sprouts, broccoli, cauliflower roasted with garlic and bacon pieces. I was still hungry so I had a 1/2 cup of coconut milk with blueberries and walnuts.

Snack before CF: Apple

Dinner: Same as lunch but with a baked sweet potato. No coconut milk parfait.

Late night snack: 1 orange. (I miss my dark chocolate)

Breakfast: 2 egg whites, 2 eggs & olive oil. (again)

Lunch: steamed cauliflower, 1-1/2 free range turkey burgers, 1 avocado. (I cook only a couple of days a week, so I eat the same food for several days in a row. I also get a bit overwhelmed trying to cook anything new. I want to use the ground bison that I got from the meat order and do some sort of sloppy joe with it that I can put on veggies. I found a few recipes online, but if anyone has a recommendation, let me know!)

Dinner: Steak salad at Corral Tree Cafe

Snack: turkey burger pieces and two apple. (I really was craving something sweet or a glass of wine, but I ate an extra apple instead. It's paleo, but not zone)

No workout today. I got home too late and tired:-(

Ended with a Chipotle salad, only lettuce, double meat and double guac. I love the confused look on their face when they try to ring me in. Finished day with a scoop of SFH whey protein.

Liz-absolutely, shellfish gooood!

Caroline-I'm suure there are a ton of delish recipes for paleo sloppy joes. Find one that looks good, has a lot of reviews with the highest rating and follow it to the letter! Can't go wrong!

Julie: Started the day with coffee, an orange and almonds. Lunch was chicken breast/wing on the bone, a small side salad (with olive oil, vinegar and lemon) and a side of fruit.

Then for a pre-gym snack I had another orange and two hard boiled eggs (minus the yolk) and a few almonds.

This was a surprisingly shocking combo to a few of my coworkers -- out of the four people who walked into the kitchen while I peeled the orange and eggs three of them stopped to say "are you eating an orange WITH hard boiled egg?" to which I replied "yeah, why, is that weird?"

For dinner I had a steak and spinach salad with broccoli, diced orange pepper, tomato, mushrooms, avocado and a some raisins.

Then about an hour later I saw Jamie's post on this blog about the bacon/avocado sandwiches and that made me feel hungry again because it looked so tasty (or maybe I was hungry because of the sugar withdrawal...)

So, first I lamented over the fact that I don't have any bacon in my house and then (instead of going to the store late at night to buy bacon) decided to cut up a tomato with a bit of cucumber and another hard boiled egg... topped it with some flax oil and vinegar and had that for dessert (a.k.a salad the sequel).

Tuesday:

breakfast: 1 hard boiled egg, 2 strips bacon, 4 strawberries, 1 c. black coffee (still in vegas)

lunch: 2 hard boiled eggs, apple

snack: 1/4 c. walnuts

dinner (home finally!): small salmon filet at home with dijon/white wine vinegar sauce, sauteed spinach with garlic, green undressed salad

...surprisingly I'm not really 'craving' anything but kind of feel like I'm in a bit of a fog.
